SIMPLE PREPARATION TIPS

Wild Yukon River salmon - caught at the mouth of the Yukon River when its flavor and oil content are at their peak - has a rich, almost buttery flavor that makes this fish easy to prepare and even easier to enjoy.  Whatever portion size you choose to prepare, follow these simple instructions for basic cooking tips: 

  • Pat fish dry with a paper towel.
  • Lightly season with salt (and pepper, if you wish) and brush with olive oil prior to cooking.
  • Using medium-high heat, broil, grill, or bake until the center is just slightly translucent—approximately 3-5 minutes per side or just under 10 minutes per inch of thickness, or when internal temperature reaches 125 degrees F.
  • Let stand a few minutes after taking it off the heat; the fish will finish cooking in its own heat.
Serve with your favorite accompaniment such as fruit salsa or spread with pesto or your favorite rub at the very end of the cooking process.  This salmon can also be served on a “bed” of pasta, salad greens, or cooked vegetables or as a stand-alone center-of-the-plate entrée.  (Serving tip for kid-friendly meals: Make sure you take out the small “pin bones” prior to serving to children—the bones are easy to see and even easier to remove.)
