SIMPLE PREPARATION TIPS
Wild Yukon River salmon - caught at the mouth of the Yukon River when its flavor and oil content are at their peak - has a rich, almost buttery flavor that makes this fish easy to prepare and even easier to enjoy. Whatever portion size you choose to prepare, follow these simple instructions for basic cooking tips:
- Pat fish dry with a paper towel.
- Lightly season with salt (and pepper, if you wish) and brush with olive oil prior to cooking.
- Using medium-high heat, broil, grill, or bake until the center is just slightly translucent—approximately 3-5 minutes per side or just under 10 minutes per inch of thickness, or when internal temperature reaches 125 degrees F.
- Let stand a few minutes after taking it off the heat; the fish will finish cooking in its own heat.
